Well. So. A lot of beer this weekend. I’m not super proud of that, or the pizza. But it is what it is, they can’t all be winners, right? Once upon a time, I think I would have let this get me down, and I’d be feeling kinda crappy about myself. But there’s no point to that, it’s pretty counterproductive. Best just to knuckle down and do better next time, right? And surprise, eating poorly makes me feel sleepy and cranky. So there’s another motivator to eat better this week.
ugh I’m feeling the same way today – sleepy and cranky because I had TWO beers last night. When did this happen? Remember how we used to go out night after night, drinking well more than two beers, and get up for work after, like, 2 hrs of sleep?
Oh yes. I do remember that. It feels like a million lifetimes ago, though. :D
Beef and zucchini pasta? Please tell me more about this!
Oh yes!! it was actually really good. We had a GIANT zucchini from the farmers market, and we had defrosted some beef kabobs… I cut the beef into small pieces and grilled them up, and set it aside; grilled some onions and garlic, put them in a giant pot with beef stock, tomato sauce, diced tomatoes, and pasta, and let that cook – in the meantime I chopped the hell out of the zucchini, and sauteed it with garlic, basil and oregano until it was soft. By the time that was done, the pasta was nice and soft, and I just folded the zucchini and beef into it. It was pretty awesome. It made a giant vat of it too, so there’ll be more to eat in the coming days!
Hmmm maybe today’s cartoon will be a recipe for that? It was pretty simple to make.
