Were you wanting a ridiculously healthy, awesomely filling lunch idea? Because I seriously just made enough of this for a whole week’s worth of meals.
I love my little red rice cooker so much, but sometimes I forget I can use it for non-sushi rice. Anyway, there’s this great little place we go for lunch sometimes, and they have an awesome black bean bowl on the menu, and tonight I thought I’d try to recreate it. I marinated some chicken breast in a little olive oil, cayenne pepper, chili powder and garlic, cooked up some brown rice, sauteed everything else, and put it all together in a bowl. I think I’m going to have some for office lunch tomorrow with some sliced avocado on top! Of course you can also do this without the chicken, and you can add things like whole kernel corn, sour cream, tortilla strips, green onions… The end result is hearty, healthy and delicious!
